Around Town: Bouzigues

Bouzigues is a small fishing town on the South Coast of France with a population of about 1,400. (Click for area maps) Town life is dominated by the Étang de Thau- a large lake which feeds into the Mediterranean. The lake is approximately 24km long and 8km wide and is fed by a hot spring known as the 'Fosse de la Vise'. Although established as an important fishing port since Roman times, the production of shellfish (especially oysters), for which the town is now internationally famous, started at the beginning of the 20th Century. All oysters from the Étang de Thau are sold as 'Huîtres de Bouzigues' (Oysters of Bouzigues) and they now represent about 10% of the total French production of oysters. A fortunate side effect of this industry is that the water quality is constantly monitored making the Étang de Thau very pleasant for swimming and all kinds of watersports.
